This is a very popular vegetable where it can be prepared both raw as well as cooked. Carrot contains iron, phosphorus and calcium and it also has an amount of beta-carotene which our body converts into vitamin A. These carotenids can be used as prevention for certain types of cancer such as lung cancer.
This vegetable has a lot of fibre and it can help our body to lower the blood sugar and cholesterol level. It also helps in preventing the cancer in intestine, especially in the large intestine. To get the most nutrients from carrots, it is best to eat them raw. When carrots are cooked, some of the nutrients will be lost and if the carrots are kept at very low temperatures, they can retrain their nutrient even till 5 or 6 months.
Medicine :
- Cataract can be prevented and eyesight can be improved when a cup of carrot juice is taken daily.
- Most of the children has their lower jaw underdeveloped and it is usually because of calcium deficiency in the child's early growth. So it is good for the child to have a raw carrot when they take a meal.
- In all cases of constipation, reduce the blood cholesterol and worm infestation, 2 or 3 raw carrots can be taken everyday.
- For the treatment of infantile diarrhoea, newborns or premature infants and all the children who is suffering from acute colitis or diarrhoea, carrot soup or fresh juice is excellent for them. Adults with acute diarrhoea and all intestinal/colon disorders can also take the carrot soup or fresh juice. It helps to prevent dehydration as well.
- Carrots which are with their leave can be eating in any form and it can help in treatment or prevent cancers, hair loss, skin disorders, all form of arthritis and gout.
- If there is a burn, carrot juice can be applied to heal faster.
- For sores on any part of the body, a poultice of boiled carrot can be used.
- For run-down conditions, low vitality, lassitude, anaemia, nervous disorders, general debility and fevers, carrot juice with a little honey will be very effective.
